this recipe i found in a delicious magazine and it was a hit with the whole family...
ingredients
20g unsalted butter, melted
150g ginger biscuits crushed in a processor
1/2 cup caster sugar
finely grated zest and juice of 3 limes
100ml rum
1 cup mint leaves
120g white choc, chopped
400g soft cream cheese
1 cup mascarpone
300ml thickened cream
* stir melted butter into biscuit crumbs until well combined. press mixture into 6 serving glasses and pack down well. chill in fridge
* bring sugar and 1/4 cup water to the boil in a pan, stirring to dissolve sugar and simmer over med-low heat for 5 mins until syrupy. set aside to infuse for 20mins
* meanwhile, melt white choc then leave to cool slightly
* add cheeses ti processor and whizz to combine, strain syrup thru a sieve, pressing down to extract as much flavour as possible
* add syrup to processor and whiz to combine
* add white choc and pulse 2 - 3 times until combined.
*spoon into glasses and set for a couple of hours
*when ready to serve, whip cream and put a dollop on each and garnish with mint leaf
